I love this completely cheesy, umami-rich recipe on crackers, as a dip with crudité and especially in a grilled-cheese sandwich with bacon! This recipe is our Taste#5, lightened-up version of the signature pimento cheese from Stinky Bklyn, a wonderful cheese shop located in Brooklyn.
4 oz pimentos, drained and chopped
1/2 teaspoon celery seed
1 tablespoon Taste #5 Umami Bomb
1 tablespoon Sriracha chili sauce
1 teaspoon garlic powder
8 ounces neufchâtel cheese
1/2 cup plain non-fat Greek yogurt
1/2 cup pickled jalapeños, chopped
2.5 cups shredded cheddar cheese
Combine the neufchâtal cheese, yogurt, Taste #5 Umami Bomb, Sriracha, garlic powder, and celery seed.
Mix in the pickled jalapenos, pimento peppers and grated Cheddar.
Taste and add more yogurt, if necessary.
Chill before serving.
This Pimento Cheese make the best ever grilled cheese sandwich, especially with a slice of smoked bacon or thinly shaved smoked ham.
